Which Option Is More Challenging?

Neither, definitively. Some of the exercises are more difficult on the mat since the stabilising muscles must work alone without the support of the reformer. Others are harder on the reformer since the carriage has to be continually controlled. Many serious practitioners use both, and see them as complementary.

Which One Should You Choose?

It completely depends upon the personal preferences and their fitness goals. If you are looking for equipment support or exercise variety and equipment support then you should definitely go for Reformer pilates but if you are looking for something simple , accessible and can be easily performed at home then go for Mate pilates.
